Off topic, but did not want to create a thread:
I just made fresh marsipan. It might be a German/Dutch/Northern European thing. It is a semi-soft almond paste to nibble on. Kind of like chocolate.. or macaroni and cheese.. very comforting. And super easy to make. It is also super sweet. There are a gazillion pictures on the internet to be found on what it looks like.
250 gram almond flour/ground almonds, very fine
200 grams icing sugar, put through a sieve (it is a bit much, maybe 150 grams?
1 egg. I did 2 eggs, it is quite soft, but in the fridge now for 24 hours
2 teaspoons of lemon juice
You can leave it at this, or you can add 1 teaspoon of rosewater (did not do that)
Just mix it, make a roll out of it, pour chocolate over it, or not. Make little balls of it and then roll it through cinnamon.
Yumm, quite happy with the result. The flavour is exactly as it should be..
